  9. Chaat Masala – 1 tsp
  10. Garam Masala – ½ tsp
  11. Turmeric Powder – ¼ tsp
  12. Red Chili Powder – 1 tsp
  13. Salt – to taste
  14. Water – as needed

Garnishing Ke Liye

  • Chopped Onion – ¼ cup
  • Chopped Tomato – ¼ cup
  • Coriander leaves – 2 tbsp, chopped
  • Sev (crisp chickpea flour noodles) – ½ cup
  • Lemon Wedges – for serving
  • A pinch of chaat masala (optional)

Puri Ke Liye

  • Pani Puri or Gol Gappa Puris – as needed, or you can make small puris yourself with all-purpose flour and semolina dough.

Instructions

Step 1: Make Masala Gravy

  1. Cook the peas: After soaking, rinse and pressure cook for 3-4 whistles. Peas should be soft but not mashed. Set aside.
  2. Masala Paste ke liye: In a blender, add chopped onion, tomato, green chilies, garlic, and ginger, and make a smooth paste.
  3. Cook the masala: In a pan, heat the oil, add the masala paste, and cook until it thickens and oil separates.
  4. Add spices: Add coriander powder, cumin powder, garam masala, turmeric, red chili powder, and salt. Cook for a few more minutes so the spices mix well.
  5. Add boiled peas: Add the boiled peas to the masala and mash it a bit so that the gravy becomes slightly thick. Adjust the consistency with water. Let it simmer for 5-10 minutes.
